Aging

Keeping the wine in an airlocked or closed vessel (carboy, bottle) for a period of time after fermentation has been completed. This allows the wine to develop it’s unique characteristics more fully. Aging times can vary and can depend upon the quality of the juice, the variety of the juice and other factors.
